Ingredients

Scale
  • 14 oz (397 g) Italian tuna in olive oil, jarred or canned
  • 2 cups (470 ml) chickpeas, canned, drained, liquid reserved (15.5-oz can)
  • ⅓ cup (80 ml) tahini or sesame paste
  • 6 tbsps (90 ml) freshly squeezed lemon juice (3 lemons)
  • 2 tbsps (30 ml) mayonnaise, good quality
  • 2 tsps (10 ml) kosher salt
  • ¼ cup (60 ml) celery, minced
  • 2 tbsps (30 ml) yellow onion, minced
  • 2 tbsps (30 ml) cornichons, minced
  • 4 tsps (20 ml) garlic, minced (4 cloves)
  • 1 tsp (5 ml) dijon mustard
  • 8 dashes hot sauce, such as tabasco
  • ½ tsp (2.5 ml) kosher salt
  • ¼ tsp (1.25 ml) black pepper, freshly ground
  • sourdough bread, halved and sliced ½ inch thick
  • hummus, store-bought or homemade
  • radishes, fresh, sliced

Instructions

  1. Tuna Preparation: Flake tuna in a mixing bowl, preserving its olive oil, breaking it into fine, uniform pieces using a fork.
  2. Tuna Mixture: Blend tuna with diced celery, minced onion, chopped cornichons, lemon juice, mayonnaise, reserved olive oil, mustard, kosher salt, and black pepper until thoroughly combined.
  3. Flavor Infusion: Refrigerate tuna mixture for 2-3 hours to allow flavors to meld and intensify.
  4. Hummus Creation: Process chickpeas with reserved liquid, tahini, garlic, lemon juice, hot sauce, and salt in a food processor until achieving a coarse, rustic puree. Adjust consistency by adding extra liquid if needed.
  5. Hummus Refinement: Refrigerate hummus for several hours to enhance flavor profile, adjusting seasonings before serving.
  6. Sandwich Assembly: Toast bread slices until golden-brown and crisp. Spread a generous layer of prepared hummus on each slice.
  7. Final Presentation: Layer chilled tuna salad over hummus-coated bread and garnish with thinly sliced radishes for a peppery, decorative finish.

Notes

  • Flavor Infusion: Refrigerate tuna mixture for 2-3 hours to allow ingredients to blend and develop deeper, more complex taste.
  • Texture Tip: Process hummus just until coarse for rustic, authentic Mediterranean texture instead of completely smooth.
  • Oil Preservation: Save olive oil from tuna can to enhance overall sandwich flavor and add richness to the mixture.
  • Seasoning Balance: Taste and adjust hummus seasonings before serving to ensure perfect salt, lemon, and garlic harmony.
