  • 250 g / 8.8 oz dried medium egg noodles
  • ½ pot (500 g / 17.6 oz) Greek-style coconut yogurt
  • 3 tbsps crunchy peanut butter
  • 3 tbsps golden caster sugar
  • 12 tbsps soy sauce
  • 1 tsp sesame oil
  • 1 tsp fish sauce
  • 1 tsp runny honey
  • Runny honey (for drizzling)
  • 1 large pineapple
  • 2 limes
  • 1 whole lime
  • 2 little gem lettuces
  • 1 fresh red chilli
  • 1 fresh red chilli (optional)
  • ½ medium-sized red onion
  • 1 small bunch fresh coriander
  • ½ small bunch fresh coriander
  • Small bunch of fresh mint
  • 2 cm piece fresh ginger
  • ½ clove garlic
  • 150 g / 5.3 oz blueberries
  • Olive oil
  • Extra virgin olive oil
  • Sea salt
  • Black pepper

Instructions

  1. Marinade Preparation: Pulse coriander, red chili, garlic, peanut butter, soy sauce, ginger, lime zest, and juice in a food processor until achieving a smooth, vibrant sauce.
  2. Sauce Division: Separate satay sauce into two portions, adding extra virgin olive oil to one while reserving the other for coating chicken.
  3. Skewer Assembly: Thread chicken breasts onto wooden skewers, positioning methodically in a roasting tray and generously coating with prepared satay sauce.
  4. Initial Seasoning: Drizzle with olive oil and sprinkle kosher salt to enhance flavor profile and promote caramelization.
  5. Grilling Technique: Grill chicken for 16-15 minutes, flipping midway, until internal temperature reaches 165 degrees Fahrenheit; brush with honey during final 3-5 minutes to create a glossy, caramelized exterior.
  6. Noodle Preparation: Submerge rice noodles in boiling water, softening for 6-7 minutes, then drain and toss with a vibrant mixture of red onion, chili, coriander stalks, soy sauce, lime juice, sesame oil, and fish sauce.
  7. Garnish Development: Toast cashew nuts until golden, fold into seasoned noodles, and prepare a decorative fruit platter with pineapple wedges, blueberries, and mint sugar.
  8. Serving Composition: Arrange grilled satay chicken skewers with crisp lettuce leaves, seasoned noodles, and accompanying garnishes in a family-style presentation.
  9. Final Touch: Provide lime halves, coconut yogurt, and encourage guests to personalize their plates with additional soy sauce and fresh lime juice.

Notes

  • Marinate Mindfully: Allow chicken to absorb satay sauce for 30 minutes before grilling to maximize flavor penetration and tenderness.
  • Skewer Strategically: Soak wooden skewers in water for 30 minutes before threading chicken to prevent burning during high-heat cooking.
  • Temperature Precision: Use a meat thermometer to ensure chicken reaches 165°F, guaranteeing safe and juicy results without overcooking.
  • Caramelization Control: Watch honey coating closely during final grilling stage to achieve golden-brown color without burning.
