Instructions
- Prepare the aromatic ingredients by zesting the lemon, finely chopping the garlic and onion, slicing the mushrooms, and mincing the fresh parsley.
- Place the beef between two sheets of plastic wrap, then gently pound it to approximately 0.2 inches (0.5 centimeters) thickness. Cut the meat into finger-width strips.
- Season the beef strips with paprika, freshly grated lemon zest, sea salt, and freshly ground black pepper, ensuring even coating.
- Heat a small amount of olive oil in a large skillet over medium-low temperature. Sauté the garlic and onion until they become soft and translucent.
- In the same skillet, melt butter and increase heat to high. Sear the mushroom slices until they develop a rich golden-brown color, then set aside on a separate plate.
- Add a touch more oil to the skillet and quickly cook the seasoned beef strips for approximately 2 minutes, turning once to achieve a golden exterior while maintaining a pink center.
- Return the sautéed mushrooms to the skillet, pour in the brandy, and allow the liquid to reduce and almost completely evaporate, creating an intense flavor profile.
- Remove the skillet from heat, gently stir in heavy cream and sprinkle with freshly chopped parsley. Serve immediately with crusty bread and tangy pickled gherkins.
