Instructions

  1. Prepare the aromatic ingredients by zesting the lemon, finely chopping the garlic and onion, slicing the mushrooms, and mincing the fresh parsley.
  2. Place the beef between two sheets of plastic wrap, then gently pound it to approximately 0.2 inches (0.5 centimeters) thickness. Cut the meat into finger-width strips.
  3. Season the beef strips with paprika, freshly grated lemon zest, sea salt, and freshly ground black pepper, ensuring even coating.
  4. Heat a small amount of olive oil in a large skillet over medium-low temperature. Sauté the garlic and onion until they become soft and translucent.
  5. In the same skillet, melt butter and increase heat to high. Sear the mushroom slices until they develop a rich golden-brown color, then set aside on a separate plate.
  6. Add a touch more oil to the skillet and quickly cook the seasoned beef strips for approximately 2 minutes, turning once to achieve a golden exterior while maintaining a pink center.
  7. Return the sautéed mushrooms to the skillet, pour in the brandy, and allow the liquid to reduce and almost completely evaporate, creating an intense flavor profile.
  8. Remove the skillet from heat, gently stir in heavy cream and sprinkle with freshly chopped parsley. Serve immediately with crusty bread and tangy pickled gherkins.
