Instructions
- Preparation: Gather equipment including large saucepan, roasting tray, and food processor. Preheat oven to 220°C (425°F).
- Roasting: Spread tomatoes, red chili, and garlic on roasting tray. Drizzle with olive oil, season, and roast for 12-15 minutes until caramelized. Simultaneously, create croutons by tearing ciabatta and coating with olive oil and salt on bottom oven shelf.
- Base Creation: Sauté red onions in olive oil, add balsamic vinegar, and reduce to create an intense flavor foundation. Transfer roasted tomatoes into the saucepan and blend with fresh basil leaves.
- Soup Finalization: Plate soup with a dollop of crème fraîche, scattered fresh basil leaves, and a drizzle of extra virgin olive oil. Serve alongside crispy croutons.
- Salsa Preparation: Mash ripe avocados and combine with cherry tomatoes, chilies, and coriander. Season with lime juice and salt to create a vibrant accompaniment.
- Vegetable Platter: Arrange thinly sliced fennel, carrots, and cucumber with grissini breadsticks for added texture and freshness.
- Dessert Creation: Blend flour, sugar, butter, ground ginger, and bicarbonate of soda in food processor. Add egg and milk, mixing until smooth. Place prunes at base of 4 microwave-safe cups, then distribute mixture.
- Dessert Completion: Microwave dessert cups for 6 minutes until set. Serve warm with golden syrup and crème fraîche for a luxurious finish.
Notes
- Roast for Maximum Flavor: Caramelizing tomatoes and garlic intensifies their natural sweetness and creates a deeper, more complex taste profile.
- Crouton Timing Trick: Bake croutons simultaneously with tomatoes to save time and ensure perfectly crisp texture without extra cooking steps.
- Blending Balance: Process soup in small batches to achieve smooth consistency and prevent overflow, ensuring a velvety texture.
- Salsa Freshness Tip: Prepare avocado salsa just before serving to maintain vibrant colors and prevent browning, keeping the dish looking appetizing.
