Chocolate Peanut Butter Cookie Sandwiches

In honor of National Peanut Butter Lover's Day, sink your teeth into these soft and chewy chocolate peanut butter cookie sandwiches.  This is a dangerous cookie.  I made them recently for friends and they begged for another batch saying "It's the cookie that no one can have just one."  Exactly!

I didn't think to sandwich the cookies between peanut butter buttercream until I made a new buttercream that did not live up to it's title of "world's greatest buttercream" or something like that.  Scrap the whole batch or figure out how to transform the buttercream.  Peanut butter to the rescue.
 Peanut Butter Buttercream Recipe:
Whisk 5 T of flour and 1 cup milk in a small sauce pan over medium heat.  When the milk/flour comes to a paste-like consistency, remove from heat and cool to room temperature.  Cream 1 cup of butter and 1 cup of granulated sugar.  Add the milk/flour mixture and 1 1/2 teaspoons of vanilla extract.  Add 1/2 cup peanut butter.  Beat on high until fluffy.
The chocolate cookie recipe can be found here.  Smear some of the buttercream on the back of one chocolate cookie and then press with another chocolate cookie to create the cookie sandwhich.
We already know chocolate and peanut butter is a winning combination.  These cookies are perfect for any time of the year.
