Almond Cookies Rolled in Emerald Sugar

I shared two biscotti recipes earlier this week:  Chocolate Almond Pomegranate Biscotti and Almond Biscotti.  As the only non-coffee drinker in the family, I prefer a soft chewy cookie to a hard crispy biscotti.  I decided I like biscotti best after the first baking...but then it isn't really biscotti. It's a cookie.

Almond Cookie Recipe:
1 stick of butter
1 1/2 cups of sugar
2 eggs
1/2 teaspoon almond extract

In a separate bowl, combine:
2 1/2 cups of flour
1 teaspoon of baking powder
1/4 teaspoon of salt

Combine ingredients. The cookie dough smells soooooooooo good.
I rolled the balls of dough in emerald crystal sugar before baking 350F for 10-11 minutes (oven times may vary).
Oh wow.  These cookies are soft and buttery with a nice punch of almond.
I forget about these cookies until I make biscotti.
Enjoy with or instead of biscotti...and with or without coffee.
