Minestrone Soup

When I was a kid, we'd go to the same Italian restaurant when we traveled to the big city. I always ordered the same thing: Minestrone Soup. My son ordered it from a restaurant recently and asked if I could make it at home. Sure I can!
Ingredients:
1 box of Chicken Broth
1 onion, diced
1 teaspoon minced garlic
3 zucchini, diced
3 yellow squash, diced
1 bag of baby carrots, diced
2 cans of Italian Style diced tomatoes
1 can of kidney beans
1 can of cannellini beans
1/2 box Ditalini pasta
1-2 teaspoons oregano - not accurate since I just shake it in
1-2 teaspoons basil - not accurate since I just shake it in
1-2 teaspoons Italian Herb - not accurate since I just shake it in
Salt & Pepper to taste
Parmesan cheese to top
Saute your onion & garlic
Add the rest of your diced veggies and simmer until softened
Cook your pasta a reserve
Add chicken stock, cans of diced tomatoes and beans, herbs and simmer
A hearty soup for our turn of weather this week!
